Aquaculture provides high-quality protein for human beings, and the use of plant protein sources which are sustainably supplied to replace the scarce fish meal for ecological conservation is inevitable. As a widely used feed ingredient in animal production, soybean meal may affect health and animal welfare due to its antinutrition factors. Itaconic acid is an endogenous inflammatory regulator, and OI as its active form can alleviate soybean meal-induced inflammation and promotes the sustainable development of aquaculture.
